Teaching my children good nutrition

Your children will model you in every way. This includes what they eat.

My son, 20 months old, asked me for a peanut butter and jelly sandwich today. In our house that’s actually a almond butter and organic reduced sugar blueberry preserves on Ezekiel bread. This is kind of my healthier version of something completely void of nutrition and full of unhealthy fat, sugar and preservatives. (that’s how I feel about skippy&welch’s on wonder bread)
Although I was giving him a better version I still felt he could have made a healthier choice. I peeled a cucumber & salted it with Himalayan salt crystals. I sat down next to him and started eating. He saw me making a better choice & next thing you know he wanted to trade :)
I know what your thinking maybe my healthier PB&J simply tastes bad? Nope the kids LOVE them and eat them up on a regular basis. I think they just want to be like Mom and Dad so I make sure they only see me eating healthy.

Easy, delicious, grilled zucchini!  The whole family liked it better than the burger & the homemade french fries!!!


1 medium fresh zucchini
Olive oil about 4-5 tablespoons 
Clove fresh garlic minced 
Salt and pepper (I suggest Himalayan or sea salt)

Slice fresh zucchini into 1/4 inch planks.

Mix garlic and oil and cover the planks with the mixture.  Salt and pepper.

Grill planks on medium until there is a nice char line on each side.

My favorite lamb rub!   Makes enough for 6 loin chops basic sized package. 

I choose loin chops because they are less gamey tasting.  Less fat means less of that strong lamb flavor.  So if you want you can trim that off before cooking but I think it adds to the tenderness of the meat. 
Dry brine them by covering the chops with sea salt for 2 hours and pat off the water that comes out.   Dry meat cooks best you don’t want it steaming. 

Mix:
2 tbsp coriander seeds
2 tbsp black peppercorns
2 teaspoons rapadura or raw sugar
Run through the food processor until chopped then add 
1 tablespoon sea salt 

Rub the chops completely and let sit up to 24 hours. 

I cook mine in real butter in a pan but I imagine the grill would be tasty also.
